This Brazil Um Wush Wush is a rare and fascinating EligoCoffee single origin from Minas Gerais, one of Brazil’s most important coffee-growing regions.

This coffee comes from Fazenda UM, founded in 2009 in southern Minas Gerais by Stefano Um. His vision was to transform Brazilian specialty coffee through quality, traceability and innovation at origin.

Fazenda UM is part of Um Coffee Co, a project dedicated to elevating Brazilian coffee worldwide through competition coffees and continuous experimentation with cultivation and post-harvest techniques.

In 2023, the Um family made coffee history: Boram Um became Brazil’s first World Barista Champion using a coffee produced on the family farm. On the same day, Garam Um achieved third place at the World Brewers Cup.

The Wush Wush variety, native to Ethiopia and subsequently exported to other countries, including Brazil – which is currently one of the very few countries that still cultivates this highly prized variety in small quantities – is renowned for its elegance and aromatic complexity. It is processed using the natural method and dried slowly for 35 days on raised beds, followed by a further 6 days of resting on a patio. This process allows a clean, intense and nuanced flavour profile to develop.

In the cup, Brazil Um Wush Wush delivers delicate tea-like and herbal aromas, balanced by caramel, almond and apricot notes. Its medium-high acidity brings brightness, while the medium body creates a harmonious experience.
