This organic, dry-pulped cascara (coffee cherry hull) is produced by the Virunga Coffee Company. Founded by Schluter in 2012, Virunga's mission is to produce high-quality coffees for the specialty market and increase premiums for thousands of smallholder farmers in the region. Virunga's strategy is threefold: 1) Increase production through good agronomic practices; 2) Improve quality through training and strict production and processing guidelines; and 3) Obtain internationally recognized certification to enable better income for farmers.
Virunga has now trained over 8,000 farmers in Good Agricultural Practices (GAP) and supported them in their potential organic certification. The company employs 35 field staff (trained agronomists) in the region and distributes over 3 million seedlings annually to farmers in eastern DRC.
Virunga Coffee is the first company to receive a license to produce and export cascara in the Democratic Republic of Congo.
Our preparation recommendation:
Pour 4-5g of cascara into about 250-300ml of hot water, let it steep for about 4 minutes, and then strain (if the drink is too strong, you can simply add a little more hot water...).
