The Mexico Juventino Matías Ortiz is an EligoCoffee single origin grown in Salchiji, a remote mountain village in the Sierra Madre of Chiapas. While access to markets is limited, the region's altitude and climate create ideal conditions for producing outstanding specialty coffee.
Together with his wife Bellaneyra, Juventino Matías Ortiz carefully cultivates this washed Bourbon lot with dedication and attention to every step of the process. The coffee grows on steep mountain slopes at over 1,700 meters above sea level, where the cool climate allows the cherries to ripen slowly, developing greater sweetness and complexity.
The washed process highlights the coffee's clarity and vibrant character. In the cup, caramel and biscuit sweetness are balanced by fresh fruitiness, delicate herbal notes and red berries.
A velvety body and medium acidity create an elegant, approachable and well-balanced coffee.
